What's For Dinner???????????

I can not stand that Question. I hear it from my family almost every night and I really hate it when it comes from my Mother-in-law. I do not like to cook and hear is why:
1- IT makes my kitchen dirty. I feel like I am constantly cleaning the Kitchen.
2- You spend an hour on something that last 10 min at the most.
3- I pull out a recipe and half way through it I find out I am missing one key ingredient.
4-You go to all the work for your family to not like it.
5-Who said that because I am a woman that I like to cook? If you don't like to cook people assume you can't. I can I just don't like to.
6-Practices and activities are always at dinner time.
7-Half the recipe call for ingredients that you never have on hand.
8-My Mother-in-law makes everything from scratch. No Box stuff for her or Mark.
9-What is wrong with a Breakfast for dinner? But the next morning what do you do for Breakfast?
10- I would just rather be anywhere then in the kitchen. I like to spend time with my kids and not worry about dinner.
So to solve some of my problems I have decide that I will post some of my Favorite on short notice recipes. I will ask you to tell me some of yours and I will try them out. Now the trick is I will not spend more then a half hour preparing this dish (it can cook for a half hour). I would like it to have stuff that everyone has on hand almost all the time(no special trips to walmart). I would like to some what healthy not hot dogs and french fries.
Here is my first recipe that I have found recently that I like:
Cheesy Chicken Chilaquiles
1 1/2 Boneless chicken breast (I use can chicken)
1 tbsp taco seasoning
1 3/4 Salsa
1 cup chicken broth
3/4 cups cilantro ( I have made it with out)
12 cups of tortilla chips
2 cups Cheese
1 cup sour cream (optional)

1.cut chicken into 1 in pieces. Mix chicken and seasoning together and put in Microwave, cover and cook on high for 4 min. Stir, microwave, covered an additional 4min or until chicken no longer pink. Drain.
2.Combine Salsa and broth. Chop cilantro. Arrange half of the Chips over the bottom of a dish breaking chips. Top with half of each chicken, salsa mixture and cheese. Sprinkle with 1/2 cup cilantro. Repeat layers one time ending with cheese.
3.Microwave, covered on high 5-7 min. or until cheese are melted and most liquid is absorbed. Let stand, covered, 5 min. Sprinkle with remaining 1/4 cup cilantro. Serve with sour cream if desired.
Now I have a casserole dish that fits in my microwave that has a lid. So I can do this receipt this way. But others of you don't so just cook the chicken in a pan and finish the receipt the rest of the way. Until the end and cook it on 350 for about 20 min.
I hope you like this recipe and many more to come. Please let me know some of your favorite.

Dallen's Baptism

Sat. Feb. 6th was a very special day for Dallen. He was baptised by his dad. He was so excited and was running down the halls at church to the font. I was very thankful to all the Family and Friends that were able to make it to the Baptism and for all the nice thing you guys wrote to Dallen. He will be able to read over what everyone wrote and remember such a great day. It was nice to be able to visit with everyone later at the house and next time we might have more room for everyone to sit. I was very proud of Dallen for the choices he has made.

Dallen B-day

On Jan. 19th I took 7 boys to classic fun center all by myself. It was fun and I made Mark come at the end to help me take them all back to our house. The boys had so much fun and played hard. I just sat at the exit to make sure no one left. Dallen had a great birthday and is blessed with such great friends.

Moving??????

Ok every wants to know if we are moving well so do I. We have had an offer on our house since before christmas. Then 3 week ago they could not finance so we had to relist our house. In the mean time we found a house up in Tremonton area that we love, that we didn't want to lose. So the Day after Dallen B-day we stated showing the house and have had many showings. They even called on my B-day for a showing. We now have another offer and are back playing the waiting game.
